Hi there and thanks for stopping at my page. My name is Victoria Coker. I am a God fearing and favored woman, wife and mother who absolutely loves to cook and host. My passion for hosting also grew my desire to serve and give using the skills that God  has blessed me with. My love for cooking began shortly after college. I realized that I always got excited about cooking and hosting friends. My home was always filled with friends coming over to eat or be entertained. I also was interested in learning about food from different cultures. Once I tasted a recipe, it did not matter what country it was from, if I  liked it, I learned how to cook it in my own way.

I get bored with food fast and hate to repeat meals, hence my interest in learning different recipes over the years. In a given week, I can choose to have a Korean night on Monday, Caribbean night on Tuesday, Mexican night on Wednesday, African on Thursday, Asian on Friday. You get the point. I love to spice things up in the kitchen. Every now and then, i get calls from friends about food ideas because they find themselves repeating the same meals over and over again. The crazy thing is you can use a good amount of the same ingredients over and over to recreate different meals

This year, my husband and myself decided to begin a healthy diet/weight loss journey. We decided to limit our carbs a good bit, so a lot of the meals I will be posting will be much different from what will typically were eating in the past.  For now, we have cut out rice, pasta, potatoes, bread, pizza and all the major grains you can think of. We now eat a lot of protein and get majority of our carbs from the variety of vegetables we eat. I have learned how to substitute noodles with Zoodles using zucchini and using cauliflower as a base in a lot of  my recipes.

Dinner means a lot to me as it is the one meal in the day that I get to eat with my family. I put some thought in thinking about what to cook and sometimes plan my meals 2-4 days in advance. I will also like to add that I do not like measuring ( probably not patient enough) It is also one of the reasons I rarely bake as most recipes require pretty close to exact measurements to turn out well. I have decided to use this platform for two things

  1. Share some of our meals during dinner
  2. Document my weight loss journey
