Catfish has always been one of my all time favorite fish. . Apart from its wonderful flavor, it has little or no bone which makes it very enjoyable to devour. I remember growing up and we will only eat Catfish on occasions. They were always huge and one was always enough. I remember, sometimes, me and my siblings will be served tilapia, titus or whitening fish, while only Mom and Dad had Catfish. As I grew up and began to do my own grocery shopping, I now understand why. It is not exactly cheap, so I do not eat it as often as I will love to. When I do buy it though, I love to use it either to make pepper soup, a stew or sauce. Today, I went with a very simple sauce and paired with Shrimp and boiled plantain. I savored every bite and so did Hubby.

Ingredients:
Catfish ( seasoned and baked in the oven) I seasoned mine the day before
shrimp
Tomatoes ( chopped)
onions ( sliced)
minced garlic
Shredded carrots
oil
seasoning of choice ( used hot pepper powder, Knor powder, curry, thyme, bay leaves) I was light with the seasoning because the fish was already properly seasoned
Steps.
Saute your onions and garlic for a few mins, add in shrimp and then add chopped tomatoes and shredded carrots. Add baked catfish once tomatoes have softened a little. Season accordingly and there you go. I kept the sauce quick and simple today. Sometimes I also throw in chopped cabbage and sprinkle some scallions right before I am done.
