I woke up today wanting to eat Nigerian fried rice. Oh wait, rice is off limits for now. Thanks to cauliflower, I was still able to enjoy the flavors I wanted. Cauliflower is one of those vegetables I tasted once several years ago never gave it another chance. it was just bla and tasteless I thought. Last year, I discovered that this vegetable, which is pretty much a white bland broccoli can be used as a substitute for several carb filled recipes. It absorbs the flavor of whatever dish you intend on making because it has not taste of its own. With a little search online, you will find cauliflower rice, mac & cheese, mashed potatoes, casserole, pizza, bread crust and so many more. I have tried all the recipes and I am so thankful for the discovery. There will be a lot of cauliflower recipes on this blog as it is now a staple grocery in my house. I buy the fresh and frozen bags depending on what recipe I am cooking. I made spicy basil cauliflower ham fried rice and paired it with peppered oven baked goat meat and it did the trick.

ingredients
One head of cauliflower ( grated with a hand grater or food processor)
a small bag of frozen mixed vegetables
minced garlic
chopped onions
chopped bell peppers ( any color and is optional)
oil
Steps
Sautee onions, garlic, then add chopped smoked ham and bell peppers, then add mixed vegetables. season as you wish( used a good bit of curry, thyme, knor, hot pepper and accent). After a few mins, add the grated cauliflower and leave to cook for about 10 more mins. Enjoy!!!!!!
